You can create different variations in topping and can be served as an appetizer or as a complete meal. I make this often at home for my family and it always goes really fast.
The one below is the classic way I usually prepare it with just 4 toppings (onions, bell peppers, corn and jalapeño).

Ingredients
- 6-8 carb savvy wheat tortillas (Trader Joe’s)
- 2 cups grated mozzarella cheese
- 3 cups pizza Sauce or marinara Sauce
- 2 medium red onions sliced
- 2 cups frozen corn
- 1 cup green bell pepper sliced
- 3-4 Jalapeno sliced
- 2 tbsps oregano
- 2 tbsps red crushed pepper
Directions
- Heat the pan.
- Place tortilla and brush with olive oil.
- Roast on both sides till golden brown.
- Remove tortilla from the pan and spread tomato sauce on top.
- Arrange sliced onions, green bell pepper, frozen corn and jalapeño slices over tomato sauce.
- Top it up with mozzarella cheese.
- Sprinkle oregano over cheese.
- Bake in the preheated oven until the cheese is melted and the piazza is golden and bubbly.
- Garnish it with red crushed pepper.
- Serve hot
